Ingredients
For the chocolate loaf cake
- 1½ cups (188 g) all-purpose flour
- ½ cup (45–50 g) unsweetened cocoa powder
- 1 cup (200 g) granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup (240 ml) unsweetened almond milk or soy milk
- ⅓ cup (80 ml) neutral vegetable oil
- 1 tablespoon apple cider vinegar
- 2 teaspoons vanilla extract
- ½ cup (120 ml) hot brewed coffee or hot water
- ½ cup (85 g) dairy-free chocolate chips, optional
For the coconut-pecan frosting
- ¾ cup (180 ml) full-fat coconut milk
- ½ cup (100 g) packed brown sugar
- 3 tablespoons vegan butter
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1 cup (85 g) unsweetened shredded coconut
- ¾ cup (85 g) chopped pecans
- Pinch of salt
Optional chocolate drizzle
- ¼ cup (45 g) dairy-free chocolate chips
- 1 teaspoon coconut oil
Instructions
Step 1: Prepare your loaf pan
- Preheat your oven to 350°F (175°C).
- Grease a 9 × 5-inch loaf pan with vegan butter or cooking spray.
- Line the pan with parchment paper, leaving some overhang on the sides to make removing the cake easier.
Step 2: Mix the dry ingredients
- Add the flour, cocoa powder, sugar, baking soda, baking powder, and salt to a large mixing bowl.
- Whisk until the cocoa powder is evenly distributed and no large lumps remain.
- Set the bowl aside while you prepare the wet ingredients.
Step 3: Combine the wet ingredients
- In a separate bowl, combine the almond milk, vegetable oil, apple cider vinegar, and vanilla extract.
- Whisk until thoroughly combined.
- Pour the wet mixture into the dry ingredients.
- Stir gently until a smooth batter forms. Avoid overmixing, which can make the loaf dense.
Step 4: Add the hot coffee
- Slowly pour in the hot coffee or hot water.
- Stir until the batter is smooth and slightly thin. Coffee deepens the chocolate flavor without making the finished cake taste strongly of coffee.
- Fold in the dairy-free chocolate chips, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
Step 5: Bake the chocolate loaf
- Bake for 45–55 minutes, checking toward the end of the baking time.
- Insert a toothpick into the center. It should come out with a few moist crumbs but no wet batter.
- If the top browns too quickly, loosely cover it with foil.
- Let the cake cool in the pan for 15 minutes.
- Carefully lift it out and transfer it to a wire rack. Allow it to cool completely before frosting.
Step 6: Make the coconut-pecan frosting
- In a small saucepan, combine the coconut milk, brown sugar, vegan butter, and salt.
- Heat over medium-low heat, stirring until the sugar dissolves and the butter melts.
- In a small bowl, mix the cornstarch with the water until smooth.
- Slowly stir the cornstarch mixture into the saucepan.
- Cook for 3–5 minutes, stirring constantly, until the mixture thickens.
- Remove from the heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
- Allow the frosting to cool for 15–20 minutes. It will thicken further as it cools.
Step 7: Frost the loaf cake
- Make sure the loaf is completely cool.
- Spoon the coconut-pecan frosting generously over the top.
- Spread it evenly, allowing a little frosting to fall naturally over the sides.
- Let the frosting set for about 15 minutes before slicing.
Step 8: Add the optional chocolate drizzle
- Place the dairy-free chocolate chips and coconut oil in a microwave-safe bowl.
- Microwave in 15–20 second intervals, stirring between each interval until smooth.
- Drizzle the melted chocolate over the frosted loaf.
- Sprinkle a few extra chopped pecans on top if desired.
- Slice with a sharp knife and serve.
Serving suggestions
Serve this cake with:
- A hot cup of coffee or tea.
- A glass of cold almond or oat milk.
- Fresh strawberries or raspberries for a fruity contrast.
- A scoop of dairy-free vanilla ice cream for an extra-indulgent dessert.
Tips for the best results
- Measure the flour accurately: Spoon it into your measuring cup and level it off instead of packing it down.
- Don’t overmix: Stop stirring as soon as the batter is combined.
- Cool completely: Frosting a warm loaf can cause the topping to slide off.
- Toast the pecans: Toasting them for 5–7 minutes in a dry skillet enhances their nutty flavor. Let them cool before adding them to the frosting.
- Adjust the frosting: If it seems too thin, simmer it a little longer. If it becomes too thick, stir in a small splash of coconut milk.
- Check your ingredients: Use dairy-free chocolate and vegan butter to keep the recipe fully plant-based.
Storage instructions
- Room temperature: Store in an airtight container for up to 1 day in a cool environment.
- Refrigerator: Keep covered for up to 5 days because the coconut-pecan frosting is moist and perishable.
- Freezer: Freeze individual unfrosted cake slices for up to 2 months, tightly wrapped. Thaw in the refrigerator and add fresh frosting for the best texture.
