6. Bake

  • Preheat oven to 170°C.
  • Line a 20 cm round cake tin with baking paper.
  • Pour in the batter and level the top.
  • Bake for approximately 50–65 minutes.
  • Insert a toothpick into the centre. It should come out without wet batter.

If the top gets too brown, cover loosely with foil.

7. Cool

Allow the cake to cool in the tin for 20 minutes, then transfer to a rack.

Let it cool completely before cutting. This helps the oat cake hold together beautifully.

Important tips for making it naturally sweet

Since you don’t eat sugar:

  • Use very ripe bananas with brown spots.
  • Choose naturally sweet apples, such as Fuji or Gala.
  • Use unsweetened dried apricots and raisins, without added sugar.
  • Don’t add honey, maple syrup, dates syrup or artificial sweeteners.
  • Check the dried fruit packaging for added sugar.

One important distinction: This cake has no added sugar, but bananas, apples, raisins and apricots naturally contain sugars. If you mean absolutely zero sugar, including natural fruit sugars, we would need a different recipe.

My recommendation
